It’s a omelette made with very basic ingredients (potatoes, eggs, salt and olive oil) that tastes delicious and it is served as tapa in all the bars and restaurants in the country. Although the Tortilla admits lots of variations, this is the simpler, basic recipe without any onion, peppers or chorizo in it.
