One of my favorite things about summer is swimming! Hot summer days practically beg for pool parties, and since pink flamingos are the hottest thing to hit the party circuit this year, a pink-flamingo pool party is in order. Pink drinks, pink balloons, pink lights, and pink treats, with touches of jungle green and pool blue to balance things out.

When you’re feeding a crowd, convenience is the name of the game. These simple ice cream sandwiches are cool and delicious, and they’re made with store-bought cookies and ice cream, so they’re super easy to make. You can make a bunch ahead of time, wrap them in plastic wrap, and store them in the freezer until party time! I used strawberry ice cream and sugar cookies to match the flamingo-pool party theme, but you can use any combination of store-bought ice cream and soft cookies. We’ve tried peanut butter cookies with chocolate ice cream, chocolate chip cookies with vanilla ice cream, and brownie cookies with cookies & cream ice cream; they’re all delicious! Design to Dish: Barbecue Pork Sliders with Coleslaw

I’m pretty sure I’ve already claimed that Mexican food is my all-time favorite, and while I wouldn’t say I’m wishy-washy, I do have a lot of favorites when it comes to food! I really, really love BBQ and can’t get enough of it in the summer. I love grilling everything I can get my hands on, I love smoky barbecue sauce, and I love keeping my kitchen cool when the temperature is soaring outside. With a certain BBQ-worthy occasion happening next week (Hey there, Fourth of July!), I thought it would be fun to put together a few easy and tasty ideas for an outdoor BBQ bash!

I’m not exactly a coleslaw fanatic, but something downright magical happens when you pile cool, tangy coleslaw on top of sweet, smoky barbecue pork sandwiches. Seriously, if these are on the menu, I’m completely helpless. Miniaturize them with some store-bought slider buns and they’re not only delicious, but cute to boot! Keep reading for the recipe.

Design to Dish: Fourth of July Mini Lemon-Berry Trifles

The Fourth of July is going to be here before you know it—it’s already less than a month away, which is unbelievable. I love getting together with friends and family to celebrate Independence Day. My mom’s side of the family has always had a family reunion around the 4th, so to me, the day means parades and ice cream and food and fireworks and lots of family togetherness. And, of course, lots of darling red, white, and blue details.

Cool and creamy trifles filled with whipped cream, cake, and berries are perfect for the Fourth of July. The treats complement the color scheme and—best of all—don’t require any baking! These individual lemon-berry trifles use frozen fruit, tangy lemon yogurt, and store-bought angel food cake, so they’re a snap to make and taste refreshing and delicious. Design to Dish: “Not Quite” Fried Ice Cream Sundaes

I know Cinco de Mayo is behind us for the year, but I can’t resist a good party theme, and fiestas are always especially colorful and lively. The food is fresh and flavorful, the colors are bright and bold, and the company is always fantastic. I think a fiesta-themed graduation party would be amazing. So would a fiesta-themed baby shower. Or a bridal shower. Or a summer birthday party. Pretty much all parties should be fiestas!

I wanted to come up with a fun, Mexican-inspired dessert to go along with the darling papel picado fiesta invitations from Minted pictured above, and the first thing that came to mind was fried ice cream. But seriously, who wants to deal with the hassle and mess of frying ice cream balls?! And it doesn’t seem like a very party-friendly dessert. My mom makes a yummy summer dessert with vanilla ice cream surrounded by a crispy, buttery, sauteed coconut/cereal crust and topping, and it occurred to me that it would be pretty easy to rolls ice cream balls in that crunchy coating to make almost-friend ice cream. My dessert experiments aren’t always successful, but these “Not Quite” Fried Ice Cream Sundaes got two very enthusiastic thumbs up from the entire family over Memorial Day weekend, and they were super easy to make. Seasonal Soirees: Farm Dinner

With golden leaves and cool mornings popping up with regularity, I don’t think we can deny it any longer: our beloved Summer is coming to an end! Luckily, the end of Summer also means bumper crops of fresh produce from the garden and orchard, and beautiful evenings with pleasant temperatures and lingering twilight. This little bridge between Summer and Fall is the perfect time to host a farm-fresh backyard soiree. Pick a pretty invitation, decorate with classic globe lights and baskets of produce, and set up long tables in the yard for friends to enjoy a fresh, simple meal together to celebrate the end of another beautiful season…
