One of my favorite flavor combinations is peppermint and chocolate. And luckily, the holiday season is the perfect time of year for baked goods featuring this tasty pairing. These easy-to-make peppermint fudge brownies have a great mix of dark, fudgy chocolate and brisk peppermint. Thanks to a dressed-up boxed brownie mix, they are super easy to make, but they’re so decadent that no one will ever know you used a baking shortcut!

Easy Peppermint Fudge Brownies
1 18-oz box of your favorite brownie mix
Ingredients to make the brownies (usually water, oil, and eggs)
1/2 to 1 teaspoon peppermint extract (depending on how much you like peppermint)
4 tablespoons butter
1/4 cup cocoa powder
1/2 teaspoon vanilla
a pinch of salt
2 cups powdered sugar
2 tablespoons milk
2-3 peppermint candy canes, crushed
Preheat the oven and prepare the brownie mix according to the package directions. Add the peppermint extract to the brownie batter and stir to combine. Spread the batter in an 8″ x 8″ square baking pan sprayed with nonstick cooking spray. Bake the brownies according to the package directions. Remove from the oven and allow to cool completely.
When the brownies are cool, prepare the fudge frosting. Melt the butter in a medium saucepan over medium heat. Whisk in the cocoa powder. Bring the mixture to a simmer and cook for 1 minute; remove from heat. Whisk in vanilla, salt, powdered sugar, and milk. At some point you might need to switch from a whisk to a wooden spoon. Stir until the frosting is smooth, then immediately spread it over the cooled brownies. Sprinkle crushed candy canes evenly over the top. Cut into 16 squares and enjoy!
