Design to Dish: Spiced-Apple Pumpkin Bread

A few weeks ago, someone I follow on Instagram posted pictures of a harvest party they hosted, and it sounded like the dreamiest thing! My husband and I always say we need to start throwing an annual Fall party, but we just haven’t gotten around to kicking off the tradition. When we do, however, it will undoubtedly include all of the quintessential autumnal things a harvest party should have: hay bales, pumpkins, apple cider, crisp weather, cute invitations, and lots and lots of sweet and spicy baked goods. This yummy quick-bake bread combines my two favorite fall flavors—apple and pumpkin—plus an irresistible cinnamon sugar topping. Whether you’re hosting a delightful harvest party or just in the mood to bake, this spiced-apple pumpkin bread is a treat!

Spiced-Apple Pumpkin Bread
Makes 2 loaves

For the spiced apples:
2 tablespoons butter
3 tablespoons brown sugar
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
2 tart apples, peeled, cored, and diced

For the pumpkin bread:
3 1/2 cups flour
2 teaspoons baking soda
1 teaspoon salt
1 tablespoon pumpkin pie spice
3 cups sugar
1 cup butter, softened
4 eggs
1 teaspoon vanilla
1 15-oz can pumpkin puree
2/3 cup water

For the cinnamon sugar topping:
2 tablespoons sugar
1/2 teaspoon cinnamon
2 tablespoons butter, melted

Preheat the oven to 350°F. In a large skillet, melt 2 tablespoons butter over medium heat. Add brown sugar and cook until bubbly. Stir in cinnamon and apples. Cook for 3-5 minutes until the apples are well coated. Remove from heat, stir in vanilla, and set aside.

In a medium bowl, combine flour, baking soda, salt, and spice; set aside. In a large bowl, beat sugar and butter until light and fluffy, about 1 minute. Add eggs and vanilla, beating until smooth. With the mixer on low, mix in pumpkin puree and water until smooth. Add dry ingredients gradually and mix until combined. Stir in spiced apples. Divide batter evenly between two well-greased 9×5″ loaf pans. Bake for 70-80 minutes until a wooden skewer stuck into the center of a loaf comes out clean. Allow the loaves to cool for 5 minutes in the pan, then carefully turn the loaves out onto a cooling rack.

In a small bowl, combine sugar and cinnamon. Brush the tops of the loaves with melted butter and sprinkle with cinnamon sugar. Allow the loaves to cool completely before slicing and serving.
