So I love the double-layered effect... But would the quote be better served if it were just black on white?

I think the solid color might serve you better. While the double layer gives it a sort of depth, it also makes it very hard to read.

I think it would be better if you make a poll of what color would be much better.

I think that a solid b&w or color would work best, and be easier to read.

Try reversing the gray and black. May be easier read in solid black with a light gray highlight
