Graduation is such an exciting time! Moving on from the world of education to the big, grown-up world of jobs and life and responsibilities–what a fantastic reason to gather and celebrate! The summery, sunny weather at graduation time seems tailor-made for casual, outdoor celebrations filled with balloons and banners and streamers, good food, and lots of fun.

Walking Tacos and their fraternal twin Frito Pies are perfect outdoor party food. They’re fun and tasty, essentially mess-free, and easy to eat while you walk and talk. You simply start with a single serving-sized bag of Fritos for each guest, and set out taco toppings (for Walking Tacos) or chili toppings (for Frito Pies). The bags are water- and grease-proof, so the entire entree is contained in one little, easily portable bag with no mess–perfect food for an outdoor celebration!

Walking Tacos & Frito Pies

1 small bag Fritos per guest (not the teeny, tiny bags that you put in your kids’ lunch boxes–the next size up)

for walking tacos:
taco meat
shredded lettuce
shredded cheese
salsa
sour cream
beans
olives
chopped tomatoes
guacamole or chopped avocados
diced onions
any other taco toppings you like

for the frito pies:
homemade chili (Here’s my favorite recipe.)
sour cream
diced onions
shredded cheddar
any other chili toppings you like
